My favorite Chewy Chocolate Chip Cookies Recipe! (So far)


After trying out a few chewy chocolate chip cookies recipe, my favorite recipe is the one from Baking Bites! I was instantly attracted by her beautiful chocolate chip cookies picture. Not only do they look perfect, they tasted great too!! They were heavenly fresh out of the oven, slightly crunchy at the edge with soft and chewy center.

I found a stronger butter fragrant/taste in this recipe compared to the recipe in my previous post! The smell from homemade cookies are just gorgeous, especially when they filled up your whole apartment and the corridor with it! Just don't be surprise when your neighbors knock on your door for some cookies :)


I know they may look identical to the previous recipe, but they sure taste different!

Chewy Chocolate Chip Cookies



I wasn't very satisfied with the Neiman Marcus recipe as the cookies came out crunchy the next morning. I read the following recipe on a Thai blog which was very popular amongst the Thai blogging society and they made a few adaption to the original Neiman Marcus recipe. The extra table spoon of corn syrup gave it that 'extra' chew, and kept it moist the next day!



Chewy Chocolate Chip Cookies by Puppadoowab
1/2 cup unsalted butter, softened
1 cup brown sugar
2 tbs caster sugar
1 tbs corn syrup (I used golden syrup because I didn't have any on hand)
1 egg
2 tsp vanilla
2 cups plain flour
1/2 tsp baking powder
1/2 tsp salt
1 cup chocolate chip cookies

Preheat oven to 160 degrees Celsius. Cream the butter with the sugars using electric mixer until light and creamy. Beat in the egg, syrup, and vanilla extract and beat until creamy. In a mixing bowl, sift together the dry ingredients and beat/fold into the butter mixture at low speed. Stir in the chocolate chips. Drop tbs size on to a baking sheet and flatten slightly to ensure even spread in the oven. Bake for around 15 min or until golden on the outside, but the center still looks soft. Do not attempt to overbake them or you'll end up with crunchy cookies!



The cookies are pretty sturdy and are very photogenic compared to the previous recipes I've tried. They stayed soft the next day and if you put in in the microwave for 10 seconds, they taste like they just came straight out of the oven! Though this is one of the better chewy chocolate chip cookies recipe that I've made, I think the dough itself is still slightly lacking in flavor, I don't know if it's just me though. But since they are so pretty and are slightly healthier than other ones that I made, they will definitely be a keeper!

Easy Banana Muffins With Creamcheese Frosting



Okay, these muffins are not the most photogenic ones I've made, but they were easy to make and tasted great! The muffins were moist, although slightly bland if eaten on its own, so the cream cheese frosting was a perfect partner! They tasted good fresh out of the oven and still good the next day straight out of the fridge!

Banana Muffins With Cream cheese Frosting
Adapted from Notebook: February 2007 , Page 123

Ingredients

220 g flour
3 tsp baking powder
1/2 tsp baking soda
100 g brown sugar
170g mashed ripe banana
80 ml vegetable oil
1 egg
185 ml milk

125g light cream cheese, softened
1 tsp finely grated lemon rind ( I added a few extra drops of lemon juice)
2 tbs icing sugar (To taste)

Preheat oven to 180°C. Combine flour, bicarbonate of soda and sugar in a bowl. Make a well in the centre. Whisk mashed banana, oil, egg and milk together in a jug. Pour into the well and gently stir until just combined.

Spoon mixture evenly among prepared muffin holes. Bake in oven for 15 minutes or until a skewer inserted in the centre comes out clean. Remove from oven and set aside to cool.

Use an electric mixer to beat cream cheese, icing sugar and lemon rind and juice in a small bowl until light and fluffy. Spread the top of each muffin with a little of the cream cheese mixture.
