Easy Banana Muffins With Creamcheese Frosting



Okay, these muffins are not the most photogenic ones I've made, but they were easy to make and tasted great! The muffins were moist, although slightly bland if eaten on its own, so the cream cheese frosting was a perfect partner! They tasted good fresh out of the oven and still good the next day straight out of the fridge!

Banana Muffins With Cream cheese Frosting

Ingredients

220 g flour
3 tsp baking powder
1/2 tsp baking soda
100 g brown sugar
170g mashed ripe banana
80 ml vegetable oil
1 egg
185 ml milk

125g light cream cheese, softened
1 tsp finely grated lemon rind ( I added a few extra drops of lemon juice)
2 tbs icing sugar (To taste)

Preheat oven to 180°C. Combine flour, bicarbonate of soda and sugar in a bowl. Make a well in the centre. Whisk mashed banana, oil, egg and milk together in a jug. Pour into the well and gently stir until just combined.

Spoon mixture evenly among prepared muffin holes. Bake in oven for 15 minutes or until a skewer inserted in the centre comes out clean. Remove from oven and set aside to cool.

Use an electric mixer to beat cream cheese, icing sugar and lemon rind and juice in a small bowl until light and fluffy. Spread the top of each muffin with a little of the cream cheese mixture.
